Lactose is the main carbohydrate in dairy products.Lactose intolerance is a digestive disorder caused by the inability to digest lactose due to lack of lactase enzyme in their body. The ability to digest lactose is genetically determined. Lactose intolerant people can consume lactose free products without any problem. In dairy industry application, lactase enzyme is used to produce lactose free dairy products. Lactase enzymes are used to degrade lactose in dairy products to glucose and galactose. Depends on the hydrolysis conditions and lactase type, some GOS (galactooligosaccarides) may also occur.

Mayalact® 5000/2000 is produced from Kluyveromyces lactis and it is a neutral lactase enzyme to be used for lactose free milk production.
Mayalact® 5000 AC is a premium product produced from Bifidobacteriumbifidum and it is developed to be used in the production of lactose free fermented dairy products. Mayalact® 5000 AC is more resistant to heat and acidic conditions. These characteristics lead to be used it in yoghurt and cheese production without any change in the production process. Mayalact® 5000 AC is active within the pH and temperature ranges foundin milk products andmilk processing conditions. It can be used in different processes (batch process, sterile filtration and an aseptic dosing unit) to produce lactose-free milk. Mayalact® 5000 AC is also well-suited to work within the pH and temperature conditions used for fermented milk products such as yogurt.
Another type of lactase enzyme in our portfolio is Mayalact® AL. Mayalact® AL is used in food supplements, ready-to-eat food mixes and processed foods. Protein mixtures containing whey proteins treated with Mayalact® AL can also be easily consumed by lactose-sensitive individuals. Examples of non-dairy products that may contain additional lactose are instant breakfast mixes, beverage mixes, coffee whiteners, baby cereals, cake mixes, sausages, mayonnaise, ready-to-eat foods, and some processed foods. Another approach is to use Mayalact® AL in dietary supplements as a digestive aid. Mayalact® AL is ideal for food supplements used in the treatment of lactose digestion, showing direct effects on the gut. It has been observed that digestion is easier when lactase supplement is taken before a meal.
